
Ingredients: (2 Servings)
- 4 Slices Bread
- 1 large or 2 small tomatoes
- 4 Tablespoons ricotta
- Salt (Flaky or Kosher Salt optional)
- Olive oil (optional)
Steps:
Lightly toast bread on both sides. Spread ~1 tablespoon of ricotta onto each slice of bread. Cut tomatoes into thick slices. Add 1-2 slices onto the ricotta. Garnish with oregano. Add salt to taste. Optionally finish with olive oil drizzle.
Why Tartine/Tartina?
My kids love this quick and easy snack. Since you can make this without the stove, oven, or microwave, this is a perfect summer dish or lazy day snack. No cooking involved also means, the fresher the ingredients, the better the taste. Here we used locally sourced heirloom tomatoes, home-grown potted oregano, Walmart bakery fresh bread, and homemade ricotta (blog coming).
