Ingredients
1 lb frozen or fresh fruit (ideas below)
1/2 lb sugar (any type)
1/2 lb vinegar (any type and can even use lemon/lime juice)
Steps
Put all ingredients into a pot. Bring to boil. Grind contents.
Continue boiling for at least 5 minutes.
Let the pot and contents cool.
Use water bath canning in a sterilized jar shelf stable storage up to 1 year. Use a normal jar and refrigerate and use within 1 month. Add a date to the top of the jar (using tape and sharpie).

Fruit ideas:
Peaches (pictured) (use honey instead of sugar)
Strawberry
BlackBerry (with a splash of vanilla extract)

Mango
Apples /crab apples (use brown sugar)
Melon (add some vanilla extract)
Pears (use brown sugar)
Why Low Sugar Jam?
Slightly healthier option to traditional jams. The flexibility to use any fruit is fun and makes for some variety in the classic peanut butter sandwich.
You do not need to use fresh fruit and can enjoy this jam all year round!
Why not?
The jam may not be as thick as you are used to. Sometimes you may need to add pectin. Low pectin fruits include melons and oranges.
Kids corner
They love to choose the fruit and get excited to bring their own customized sandwiches for lunches.
Extra Notes
Eat with crackers and cheese, over yogurt, on top of cheesecake, or even PB&J sandwiches.
